This is a really lovely and refreshing side salad. A fantastic accompaniment to some satay or on the side of some noodles or stir fries. It is also very quick to prepare.
What you will need
1 large cucumber
3 tea spoons rice wine vinegar
1 tea spoon sesame oil
1 teaspoon sugar
Salt
2 tablespoons sesame seeds, toasted
Slice the cucumber into ribbons lengthways using a wide potato peeler. Once this is done, mix together the rice wine vinegar, the sesame oil and sugar and salt.
Toast the sesame seeds in a pan until lightly browned. This should only take a minute or two. Dress the cucumber with the dressing and sprinkle the sesame seeds over the top.
