Indian spiced sweetcorn is a great side dish, which is really simple to knock together. I also had some sweetcorn left from making my sweetcorn salsa the other day (see:http://gipsytoast.blogspot.co.uk/2013/09/sweet-corn-salsa.html)
We were having aloo gobi for dinner tonight (see:http://gipsytoast.blogspot.co.uk/2013/09/aloo-gobi-aka-spicy-cauliflower-and.html) and I thought I would accompany this with this delicious dry spiced sweet corn.
What you will need
1 small onion
200g sweetcorn
2 green chillies
1 tea spoon ground coriander
1 tea spoon ground cumin
1/2 tea spoon turmeric
1/2 tea spoon paprika
1 tea spoon lemon juice
Firstly chop the onions and chillies. Saute the onions in a little bit of oil for 5 minutes until softened. Next add the chopped green chillies and all the spices and cook off for a minute until fragrent. Add the sweetcorn and stir through the spices. Top with the lemon juice and heat the sweetcorn through before serving.
This was perfect with some aloo gobi and yoghurt.
