Cauliflower mash

This is a great alternative to mashed potato if you are on a low carb diet or just want to increase your vegetable intake. It is filling and looks and feel like mashed potato in texture. It is also actually much quicker to prepare; no peeling necessary. So if you want to indulge in some guilt free sausages and mash, this is a winner every time.

What you will need
1 head of cauliflower
Splash of milk
Knob of butter

Break up the cauliflower florets and place in a steamer to steam until cooked through.

Next, attack the cooked florets with a blender (or hand held). They should turn into a beautiful puree. Add salt and pepper to taste, a splash of milk and a knob of butter. Stir through until smooth and creamy.

I had this with my delicious quorn sausage casserole. It's the great low GI and low fat equivalent of 'bangers and mash'. See here.
