Courgette, ricotta and chilli pizza

The only plus side to being home all week due to illness is that I have had a bit more time on my hands to do some cooking. This took the form of bread making. Pizza dough raising to be exact. I then needed a fresh and healthy topping for my fabulously fresh pizza bases. My topping selection was the crisp and healthy courgette with creamy ricotta cheese with a chilli kick. What you will need
1 pizza base
1-2 table spoons tomato sauce or puree
2 tea spoons oregano
1/2 a courgette
1/2 an onion
100g ricotta cheese
1 table spoon grated parmesan
1-2 tea spoons chilli flakes


With your ready made pizza base rolled out and ready to top, pre-heat the oven and an oven tray to 200 degrees.


Using a peeler, slice the courgette vertically into thin long strips and slice the onion.


Top the pizza with the sauce and then sprinkle over the oregano (dried is fine).



Next top with the courgettes and onions and dollop over the ricotta cheese. Finally sprinkle over the chilli flakes and the parmesan.


Dust a non stick oven tray with flour, lay out the pizza and cook for 10-12 minutes until the base is crispy and the top has browned.


This really is a magic bread and easy stuff to make a fantastically fresh pizza for dinner, as long as you've got the time to let it rise. Also, make sure you always dust every surface the dough touches with flour to stop it sticking.
